The Benefits of Instant Fish Porridge for Toddlers Based on Indian Mackerel

This study aims to examine the potential nutritional benefits of instant fish porridge made from Indian mackerel for toddlers and to evaluate its physical, chemical, and sensory characteristics. Results show that the product meets a significant portion of toddlers' daily protein needs and is well accepted in terms of sensory evaluation. This product has the potential to be developed as a nutritional solution for early childhood, especially in areas vulnerable to malnutrition.


Introduction

Toddler malnutrition in Indonesia remains a serious concern, especially in areas with limited access to nutritious food. Meeting nutritional needs during the toddler years is crucial to support brain and physical development. Indian mackerel is a nutritionally rich, affordable, and readily available marine fish. Processing Indian mackerel into instant porridge aims to provide a nutritious, long-lasting, and child-friendly food alternative.


Research Objectives

  1. To develop a formulation of instant fish porridge using Indian mackerel.

  2. To analyze the nutritional content of the porridge.

  3. To assess consumer acceptance among toddlers and their mothers.


Methodology

This study was conducted in three main phases:

  1. Product Formulation:
    The instant porridge was prepared by steaming and mashing Indian mackerel, then combining it with rice, dried vegetables (carrots, spinach), and natural seasonings. Drying was carried out using a drum dryer or low-temperature oven.

  2. Nutritional Analysis:
    Laboratory tests were conducted to measure protein, fat, carbohydrate, and omega-3 (EPA and DHA) content.

  3. Sensory and Acceptance Testing:
    Sensory evaluation was carried out by adult panelists (mothers of toddlers), and trial consumption was conducted with toddlers aged 1–5 years to assess preference and digestive response.


Results and Discussion

  • Nutritional Content:
    One serving (50 grams) of the porridge contains approximately 6.5 grams of protein, 2.3 grams of fat, and 160 kcal. The omega-3 content (±120 mg per serving) supports brain development and is beneficial for toddlers' cognitive functions.

  • Sensory Acceptability:
    The porridge had a soft texture, a mild fish aroma, and an appealing taste and color. About 85% of mothers expressed willingness to provide this product to their children.

  • Benefits for Toddlers:
    The porridge contributes significantly to toddlers' protein and essential fatty acid requirements. It is suitable for use in programs targeting mild undernutrition in children.

  • Advantages of the Instant Format:
    The product can last up to 6 months in sealed packaging, requires only hot water for preparation, and needs no additional cooking.
