How to Clean Fish So That the Gallbladder Doesn't Rupture and Make the Meat Bitter

Bitter fish meat is usually caused by the gallbladder breaking when cleaning the fish's stomach contents. Fish gallbladders are small and dark green in color. The wrong way to cut and clean fish can potentially cause the gallbladder to be cut and broken, so that the liquid will seep into the fish meat. Cleaning fish properly is very important to avoid the bitter taste caused by the broken gallbladder. Here are the steps you can follow:

1. Preparation of Tools and Materials:

  • A sharp knife (preferably a fillet knife)
  • Cutting board

  • Running water

2. Steps to Clean Fish:
a. Clean the Scales:

  • Scrape the fish scales from the tail to the head. Do this carefully so as not to damage the fish's skin.

b. Open the Fish Stomach:

  • Use a knife to make a slow incision in the fish's stomach, from near the anus towards the head.
  • Make the incision carefully so as not to go too deep and hit the gallbladder.

c. Remove the Stomach Contents:

  • Carefully remove the fish's stomach contents. Pay attention to the location of the gallbladder, which is usually yellowish green and located near the liver.
  • Try to remove the stomach contents by pulling it slowly so that the gallbladder does not rupture.
  • If the gallbladder looks too close to the incision, use the tip of a knife or your finger to slowly remove it.

d. Remove the Gills:

  • Remove the fish's gills by cutting them with scissors or a knife.

e. Wash Clean:

  • Wash the fish under running water until clean from any remaining stomach contents and blood.
  • Make sure the inside of the fish's stomach is completely clean.

f. Pay Attention to the Gallbladder:

  • If the gallbladder accidentally ruptures, immediately wash the part affected by the gallbladder with running water until clean.
  • You can also use a little salt or vinegar to remove the bitter taste.

Additional Tips:

  • Use a sharp knife so that the incision is more precise.
  • Do the cleaning process under running water so that the dirt is immediately carried away by the water.
  • If the fish is large, you can use gloves.
  • After cleaning, you can coat the fish with lime or lemon juice to remove the fishy smell.

By following these steps, you can safely clean the fish and avoid the bitter taste caused by the ruptured gallbladder.
