Ingredients:

  • 2 Wahoo fish steaks (about 6-8 oz each)
  • 2 tbsp olive oil
  • 1 tbsp unsalted butter
  • 2 cloves garlic, minced
  • 1 tbsp lemon juice
  • 1 tsp fresh thyme or rosemary
  • Salt and pepper to taste
  • 1/2 tsp smoked paprika (optional)
  • Lemon wedges for garnish

Instructions:

  1. Prepare the Fish: Pat the Wahoo steaks dry with a paper towel to remove excess moisture. Season both sides with salt, pepper, and smoked paprika if using.
  2. Preheat the Pan: Heat olive oil in a large skillet over medium-high heat. Once hot, add the fish steaks.
  3. Sear the Steaks: Cook the Wahoo steaks for about 3-4 minutes on one side until golden brown. Flip and cook for another 3 minutes.
  4. Add Flavor: Reduce the heat to medium-low, add butter, minced garlic, and fresh herbs. Spoon the melted butter over the fish continuously for 1-2 minutes.
  5. Finish with Lemon: Drizzle fresh lemon juice over the fish before removing it from the pan.
  6. Serve: Place the steaks on a plate and garnish with lemon wedges. Pair with roasted vegetables or a fresh salad for a complete gourmet meal.
