Here are the ingredients you need to make yum woon sen:
- Dried shrimp: You can find dried shrimp at any Asian grocery store. Dried shrimp are sometimes found in the dry food section or in the refrigerator for maximum freshness. Dried prawns store very well once opened, so there are plenty of opportunities to make use of leftovers, such as in a courgette and cucumber salad with dried prawns.
- Glass noodles : Easy to find in the dry noodle section of any Asian grocery store. The hard part is finding the right noodles, because there are so many types of noodles. It will say glass noodles on the package.
- Minced pork: It's best to get lean pork as a healthier alternative.
- Shrimp: Fresh or frozen shrimp can be used for this Thai glass noodle salad. Make sure the prawns are cleaned properly before boiling them in hot water
- Onions, spring onions and cilantro: All essential Thai ingredients and easy to prepare.
- Peanuts : Thais love the crunch of peanuts, which definitely add texture to the salad.
- Red chilies: Just medium sized chilies for salad dressing. You can finely chop it or pound it with a mortar and pestle.
- Garlic: Finely chop so that it mixes evenly into the salad dressing.
- Fish sauce: Adjust to taste, but don't overdo it, because it will overpower the taste of the salad.
- Brown sugar: Gives a caramel flavor to fish salad dressings and provides much-needed sweetness.

Step by step instructions on how to make yum woon sen:
- Soak dried shrimp in room temperature water for 30-60 minutes. When it is soft, drain and wash thoroughly to remove dirt. Using a mortar and pestle, pound until crumbly.
- Soak glass noodles in room temperature water for 5 minutes. Then boil it in a pan of boiling water. Remove with a sieve and cut into shorter pieces.
- Using a colander, add the peeled prawns and cook until pink in the same pot of boiling water. Remove and place in ice water to stop the cooking process.
- Then put the minced pork in a colander and cook in the same pan.
- Thinly slice the red onion.
- Cut the spring onions into 3 cm sticks.
- Coarsely chop the coriander leaves and peanuts.
- Add all the fish sauce, lime juice, brown sugar, garlic and chili into a bowl then stir until evenly mixed.
- In a large bowl, add noodles, pork, fresh shrimp, shallots, scallions, cilantro, and dried shrimp.
- Add salad dressing and stir until evenly mixed.
- Let the salad soak for about 10-15 minutes so that the flavors combine. This will help the noodles absorb the sauce and the vegetables soften a little.
