Ingredients:
For the shrimp:

  • 1 cup cornmeal

  • 1/2 teaspoon paprika

For the remoulade sauce:

  • 1 cup mayonnaise

  • 1 tablespoon lemon juice
  • 1 tablespoon finely chopped capers
  • 1 tablespoon finely chopped dill pickles
  • 1 teaspoon hot sauce (adjust to taste)
  • 2 teaspoons finely chopped fresh parsley

For serving:

  • French baguette or French bread, cut into sandwich-sized portions

Instructions:

  1. Prepare the remoulade sauce by combining all the sauce ingredients in a bowl. Mix well, taste, and adjust seasoning if needed. Cover the bowl and refrigerate it while you prepare the shrimp.
  2. In a shallow dish, mix the flour, cornmeal, salt, black pepper, paprika, and cayenne pepper to create the coating mixture for the shrimp.
  3. Pour the buttermilk into another shallow dish.
  4. Rinse the shrimp and pat them dry with paper towels.
  5. Dip each shrimp into the buttermilk, allowing any excess to drip off.
  6. Then, dredge the shrimp in the flour-cornmeal mixture, pressing the coating gently onto the shrimp to adhere.
  7. In a large skillet, heat enough vegetable oil to submerge the shrimp. Fry the coated shrimp over medium-high heat until they are golden brown and cooked through, about 2-3 minutes per side. Fry in batches to avoid overcrowding the pan.
  8. Remove the cooked shrimp from the oil and place them on a plate lined with paper towels to drain any excess oil.
