Here's a general outline of the process:

 

1.    Choose fresh squid
Start with fresh, whole squid. Look for squid with a firm texture and shiny skin. It's preferable to use smaller-sized squid as they dry more evenly.

2.    Clean the squid
Rinse the squid under cold water to remove any dirt or impurities. Remove the head, tentacles, and internal organs. Peel off the skin, leaving only the white meat.


3.    Score the squid
Score the squid by making diagonal cuts on one side. This will help the squid dry more evenly and speed up the drying process.


4.    Salt the squid
Rub salt generously over both sides of the squid, ensuring it's evenly coated. The salt helps draw out moisture from the squid and acts as a preservative.


5.    Optional marinade
If desired, you can marinate the squid in a mixture of soy sauce, sugar, garlic, and other seasonings for added flavor. Allow the squid to marinate for 30 minutes to an hour.

6.    Hang the squid
Attach a string or skewer through the scored side of each squid, threading multiple squid onto the same string or skewer. Make sure they are spaced apart to allow for airflow during the drying process.


7.    Dry the squid
Hang the squid in a well-ventilated area, preferably outdoors or in a dry, breezy location. Protect it from insects by using a mesh cover or placing it inside a netted bag. The drying time can vary depending on the climate and the size of the squid, but it usually takes several days to a week. Ensure the squid is completely dry and leathery to the touch.


8.    Store the dried squid
Once the squid is thoroughly dried, remove them from the strings or skewers and store them in an airtight container or resealable bags. It's best to keep them in a cool, dry place away from moisture and sunlight. Properly stored dried squid can last for several months.
