- 1 thumb-sized piece of galangal, sliced
- 3-4 bird's eye chilies, chopped
- 1 tablespoon of vegetable oil
- 4 cups of chicken or seafood stock
- 1 cup of coconut milk
- 1 tablespoon of fish sauce
- 1 tablespoon of palm sugar
- 1 lime, juiced
- 1 pound of mixed seafood (shrimp, squid, mussels, etc.)
- 1/4 cup of cilantro leaves, chopped

Instructions:
- Heat the oil in a pot over medium heat. Add the lemongrass, kaffir lime leaves, garlic, shallots, galangal, and chilies. Stir-fry until fragrant, about 2-3 minutes.
