Cakalang Fufu is a dish from Minahasa, North Sulawesi. This is a mackerel fish that has been seasoned and cooked by clamping it in a bamboo frame then smoked until the fish turn red and dry. If it’s cooked by the right way, Cakalang Fufu is can last up to one month in room temperature.
3. Gonggong Rebus – Riau Islands
Gonggong Rebus or Boiled Gonggong is a dish that came from Riau Islands. Gonggong is a local name for sea snail that have white-brownish shell and medium size. This sea snail is known as Laevistrombus canarium. Before its cooked, the sea snail will be seasoned with garlic that its boiled with some aromatic spices like ginger. Boiled Gonggong then served with a lime sauce that taste spicy and tangy.

4. Sotong Pangkong – Pontianak
Sotong pangkong is made from a dried squid and usually eaten as a snack. This dish is come from Pontianak, West Kalimantan. First, the squid is dried then the dried squid is grilled with charcoal, and when it’s done the next step is pounding the squid to become flat. Sotong Pangkong is usually served with a sauce that made from peanuts.
5. Pempek – Palembang
Pempek is a dish that originated from Palembang, South Sumatera. Pempek is famous as a street food with the main ingredient is mackerel and flour. The original Palembang’s pempek is have a strong mackerel flavour because it use fresh and good quality mackerel. It is made by making the dough from the main ingredient then fried until crispy and served with Cuko, a traditional vinegar sauce that taste sweet and sour.
6. Gohu Ikan – Ternate
Gohu Ikan is a dish that similar to sashimi from Japan or Poke from Hawaii. It is a dish from Ternate, North Maluku that use raw fish meat like tuna or mackerel. To make this dish, you will need fresh, raw tuna or mackerel meat, salt, lime and basil. Mix all those ingredient and then add some shallot and red pepper that have been sautéed.
