Ingredients:

  • 1 lb (450g) whole squid (cleaned and tentacles removed)
  • 2 tablespoons olive oil
  • 2 tablespoons lemon juice
  • 2 cloves garlic, minced
  • 1 teaspoon paprika
  • 1/2 teaspoon dried oregano
  • Salt and black pepper to taste
  • Lemon wedges (for serving)

Instructions:

  1. Rinse the squid under cold running water and remove any internal organs (if not done already). Pat the squid dry with paper towels. If you have whole squid, you can either grill it whole or cut it into rings. To cut into rings, lay the squid flat on a cutting board and use a sharp knife to slice it into rings of about 1/2 inch thickness.
  2. In a bowl, mix together the olive oil, lemon juice, minced garlic, paprika, oregano, salt, and black pepper. This will be the marinade for the squid.
  3. Place the cleaned squid in a resealable plastic bag or a shallow dish and pour the marinade over it. Toss the squid to ensure it's well coated with the marinade. Seal the bag or cover the dish and let it marinate in the refrigerator for at least 30 minutes, or preferably up to 2 hours. The longer the marination, the more flavorful the squid will be.
  4. Preheat your grill to medium-high heat. If using charcoal, let the coals become white-hot before cooking. You can also use a grill pan or a grill basket if you prefer.
  5. Remove the squid from the marinade, allowing any excess marinade to drip off. Place the squid on the grill and cook for about 2-3 minutes per side until it's opaque and grill marks appear. Be careful not to overcook, as squid can become tough if cooked for too long.
  6. Once the squid is done, transfer it to a serving platter and squeeze some extra lemon juice over the top. Serve immediately with lemon wedges on the side for added flavor.
