  • 3 cloves Garlic

  • 2 Kaffir lime leaves
  • 1 stalk Lemongrass (bruised)
  • 1 thumb-sized piece Galangal (bruised)

Instructions:

  1. Dry the Anchovies: Dry the anchovies using an air fryer or oven according to the guide above. Set aside.
  2. Sauté the Spices: Heat 1 tablespoon of oil. Add the ground spices, kaffir lime leaves, lemongrass, and galangal. Sauté over medium heat.
