lautnusantara.com Goldband Snapper (Pristipomoides multidens), often called Yellowtail Snapper, is a demersal fish with high economic value, especially for the export market.

Packaging technology must be tailored to the product's status (whole fresh, filleted, or processed) and its distribution destination (local or export).
1. Whole Fresh Fish - Cold Chain Focus. This is standard packaging to maintain the freshness of the fish immediately after catch.

  • Container: Use a thick insulated box (Cool Box or Styrofoam Box).
  • Cooling Media: Pure Flaked Ice or Slurry Ice.
  • Icing Technique: Fish are arranged in layers between ice. The bottom, middle and top should be covered with ice, ensuring the entire surface of the fish is in contact with the ice to achieve the optimal temperature of 0°C.
  • Note: The Ikejime technique (quickly killing the fish to reduce stress) can be used before icing to maintain excellent meat quality and color.
  • Advantages: Maintains premium texture and flavor for markets requiring maximum freshness.

2. Fillet/Cut Products (Frozen Products) - Airtight FocusProducts processed into fillets require protection from freezer burn and oxidation.

  • Vacuum Packaging (Vacuum Sealing):
  • Material: Nylon/PE or PA/PE (Polyamide/Polyethylene) plastic which has good puncture resistance and oxygen barrier properties.
  • Process: Air in the packaging is removed, then sealed tightly (hermetically).
  • Advantages: Prevents oxidation, slows the growth of aerobic bacteria, and extends shelf life at freezing temperatures ($\le$ $-18^\circ\text{C}$).
  • Glazing: Coating frozen fillets with a thin layer of ice water (ice glaze) before packaging to protect the meat surface from dehydration (freezer burn).
  • Secondary Box (Inner/Master Carton): Vacuum-sealed fillets are put into secondary cartons and then strong Master Cartons for export shipments. 3. Processed Products (Nuggets, Meatballs, etc.)

Using a combination of vacuum packaging and Modified Atmosphere Packaging (MAP) if necessary, as well as plastic trays (Polystyrene/PS) sealed with a sealer for retail products ready for sale in supermarkets.
