  • Frozen Shrimp Manufacturing Process

General stages include:

1. Receiving and sorting raw materials
Fresh shrimp are sorted by size, type, and quality. Only shrimp in good condition are used.

2. Washing
Shrimp are washed using clean or chlorinated water to remove dirt and microbes.

3. Peeling and deveining
Depends on the desired product type:

  • Head-on, shell-on (with head and shell)
  • Headless, shell-on (without head, shell still on)
  • Peeled and deveined (without shell and intestines)

4. Additional ingredients (optional)
Sometimes a salt solution or sodium metabisulfite is added to preserve color and prevent oxidation.

5. Freezing
Using technologies such as:

  • Blast freezer (rapidly cold air)
  • Contact plate freezer
  • IQF (Individually Quick Frozen) → freezes shrimp individually to prevent them from sticking together.

6. Packaging
Shrimp are wrapped in plastic bags or vacuum-sealed packages, then packed into cartons.

7. Cold storage
Stored at -18°C to -30°C to maintain quality during distribution.
